A freshly opened coconut is expected to pour clear, so a blush-pink tint can be surprising. The simple answer to why coconut water turns pink is usually a natural reaction between compounds in the water and oxygen. Freezing is another option for leftover coconut water, particularly if you plan to use it in smoothies later.
